I planned on getting a nap today. Instead banana bread and No Fail Microwave Divinity:
4 cups sugar
1 cup light corn syrup
Dash of salt
3/4 cup water
3 egg whites, stiffly beaten
1 teaspoon vanilla
1/2 cup chopped nuts
Combine sugar, syrup, salt and water in a 2-quart casserole dish. Microwave on HIGH for 19 to 20 minutes.
Pour hot syrup gradually over the egg whites, beating constantly at high speed until candy thickens and loses its gloss. Stir in vanilla and nuts. Drop by teaspoonfuls onto waxed paper.
And I made 5 Flavor Pound Cake:
3 c. sugar
1 c. butter
1/2 c. shortening
5 eggs
3 c. cake flour
1 c. milk
1 tsp. each rum, butter, lemon, coconut and vanilla flavoring
1 tsp. baking powder
1 c. butter
1/2 c. shortening
5 eggs
3 c. cake flour
1 c. milk
1 tsp. each rum, butter, lemon, coconut and vanilla flavoring
1 tsp. baking powder
Preheat oven to 325°F.
Grease and flour Bundt or pound cake pan. Cream butter, shortening and sugar, add eggs 1 at a time. Add flour and milk gradually alternating the two. Add the 5 flavors and stir.
Bake at 325°F for 1-1/2 hours.
GLAZE FOR POUND CAKE:
1 c. sugar
1/2 c. water
1 tsp. butter, coconut, lemon, rum and vanilla flavoring
1/2 c. water
1 tsp. butter, coconut, lemon, rum and vanilla flavoring
Bring mixture to a boil. Pour 1/2 over cake when removed from oven. Cool and turn out of pan. Pour rest of glaze over cooled cake and turn cake.
And then I made, smothered steak, mashed taters and because my boy is feeling icky, mac and cheese.
Conor is still waiting on his custard pie, that will have to wait till Sunday.
