What to do

This Friday finds me pondering, oh my what to do.

Option 1.

Maraschino Cherry Cake

10 oz jar maraschino cherries
white cake mix
reserved juice from cherries
enough milk to make 1 cup juice
1 stick butter melted
2 tsp vanilla
3 eggs

Preheat oven to 350 degrees. Grease and flour two round cake pans.
Drain the cherries and reserve the juice. Slice cherries in half.
Put cake mix in a bowl, add enough milk to bring cherry juice to one cup. Pour into cake mix. Add all other ingredients to the bowl and mix well. Pour into cake pans and bake at 350 for 25 - 30 minutes.

Cool for 10 minutes then turn to cooling racks. After completely cool frost with Cool whip or a homemade version.

Option 2.

Orange Candy Cake

Preheat oven to 300 degrees

1 cup butter
2 cups sugar
5 eggs
1 tbs vanilla
1 pkg dates (8oz)
1 lb orange candy slices - yes i just typed it.
2 cups pecans
1 - 4 oz can coconut
4 cups flour
1/2 tsp soda
1 tsp salt
3/4 cup buttermilk

Cook at 300 degrees for 2 1/2 hours.

Sauce

1 cup orange juice
2 cups sugar
heat until dissolved

After you take it out of the oven, punch hole in ti with ice pick and then pour sauce over cake while hot. Let set in pan over night.

*** here are some things about this recipe. It was hand written by a sweet little lady from KY on a piece of paper. I would think you would mix all the dry ingredients then add all the others. *** There is talk that you need to soak the candy slices in orange juice for a day maybe two. This was not written on the paper but can you really go wrong soaking something. I may try it for a day in the fridge and see what happens.

Not sure which I will make because they both sound super yummy.
